Summer may be clinging on for a few more days and refusing to leave us just yet, but a chill is definitely returning to the air. With Autumn round the corner our appetites are craving more hearty root-based meals.
And since October is the month of Halloween, we thought we’d ask our our Nutritionist Emma to (trick or) treat you to two recipes using our favourite member of the pumpkin family – the mighty butternut squash!
Butternut squash is delicious, low-calorie and low-fat. It’s a healthy carbohydrate, rich in vitamins A and C as well as potassium, a nutrient that helps maintain blood pressure and kidney function. These gourds also have a high fiber content, which has been linked to a lower risk of heart disease.
What’s not to love? So check out Emma’s delightful Falafel and Butternut Squash Salad and then the most Autumnal of dishes: Butternut Squash Soup. Mmmmmm!
